Grapes: 66% Chardonnay, 34% Savagnin
Region: France> Jura> Arbois.
Notes:
The appellation of this wine has a more of a compelling texture than that of the White Burgundies. It’s concentrated with exceptionally brisk acidity married to a honeyed-texture with notes of hazelnut, beeswax and fresh mountain air.
Fermentation takes place in both stainless steel and in wooden foudre. Afterwards the wine is racked into smaller oak barrels for aging, often 2-3 years.
Food Pairings: Pork, charcuterie, seafood with rich, buttery sauce.
