Pale yellow color. Good bubble detachment. Due to bottle ageing, for 15 months, the wine has developed fine flinty and fruit aromas and lush texture on the palate. Lovely earth-driven character with a masculine structure and an elegant terroir-driven richness. Cava's name derives from the Catalan word for a “cave”, which became the term for the production method. Traditional native varietals-Macabeo, Xarel·lo, and Parellada-contribute to its distinctive character. Castillo Perelada has been producing wine since the 16th century and now belongs to the Peralada Group that invests around 1.5 million euros annually on Corporate Social Responsibility initiatives.
