An expressive nose of small tart red berry fruit and hints of spice. On the palate: supple and gourmand, with a fresh finish. The Cuilleron family domaine, located in the town of Chavanay, was founded several generations ago (1920). For young Yves Cuilleron, a passionate winemaker, "making a wine like every other is inconceivable”. He wants “a wine with Cuilleron’s signature: a wine that bears the hallmarks of its terroir and vintage but also has its own, original character”. This cuvee is sourced from terraced vineyards perched on the slopes of Chavanay, which makes most mechanization difficult, if not impossible. The soil is a mix of sand and granite with a very thin top soil. In the cave, the grapes are fermented using indigenous yeasts. The wine is aged in combination of stainless steel tanks and barrels for 8 months.
