“The Ripper” story is an amazing tale. Shiraz fruit from the Donnybrook vineyard in Geographe, Western Australia, is crushed, chilled, then trucked across the country for over three days to the Hunter Valley on the east coast where they are fermented and bottled. This extended cold maceration produces dense color and flavor with a fine tannin structure. The cool hills of Donnybrook give us amazing elegance while retaining the classic spicy Shiraz characters. Huge berry fruit, spicy nutmeg and chocolate characters fill the palate. The oak is well balanced with acidity leading to a long finish of persistent fruit, fine grained tannins and cool climate mint notes. A full bodied, warm wine.
