Description: Established family winery before the time of phylloxera. The Fouassier family is one of the oldest wine grower families in Sancerre. The Les Chasseignes vineyard was planted in mid-1900’s and the current plantings are 20 to 40 years of age. The wine exhibits classic aromas of flint, limestone, and acacia flower. Linear direction on the palate and medium-weight. Lots of stone-fruit, gravel, lemon curd, and key-lime. With aeration and proper temperature the wine continues to open. Refined and balanced.

Food Pairing: Flaky white fish, acidic foods, goat cheese (Chevre), oysters, salads, salmon, tomatoes, etc.
