Description: For over a century, Domaine Ellevin has been making wines in the village of Chablis. The village of Chablis is rich in Kimeridigian Limestone soil, just across the river from the grand cru region south of Chablis. The wine is aged in a stainless steel tank for 8 to 12 months. Nine months on the lees, without batonage, highlighting the balanced character between the grape and the terroir. Pale yellow with a slight greenish hue in color. Aromas of gravel and flint. Upfront the mineral stone is revealed with an undertone of tart baking apples and saline with crisp acidity and excellent balance. This is a very good example of the classic French Chablis.
