The traditional, and most distinctive fizz from Limoux, a higher elevation enclave within the Languedoc region of South France, is Blanquette de Limoux. Made mainly from Mauzac, the distinctive local grape, whose apple-skin aromas can come as rather a unique to palates more used to wines made from Chardonnay and Pinot Noir in the image of champagne. Dry, creamy texture with subtle green apple, lemon and clean finish. Methode Ancestrale (ancient method) is the oldest way to produce sparkling wines, in which both the 1st and 2nd fermentations takes place in the bottle, with cloudy sediment defiantly left in the bottle.
Food pairing: aperitif, robust food, aged cheese.
