For over a century, Domaine Ellevin has been making wines in the village of Chichee. This Chablis is from their premier cru vineyard of Vosgros, rich with infamous Kimeridgian soil, just across the river from the grand crus region, south of the village of Chablis. Flattering and delicate with aromas of white flowers and minerals. Smooth texture, good balance in mouth with nice acidity on the finish. The wine is aged in a stainless tank for 8 to 12 months with 9 months on the lees without batonage with intention of highlighting the characters of the grape and terroir without overwhelming earthiness that’s became to known Chablis style.
