Tannin: Light+. Notes: 30 year old vines.
Jura, a mountainous region in west central France’s. Due to the remote location, Jura winemakers tend to grow the indigenous Ploussard , creating an entirely unique wine. This red wine, made from 30 yr old Ploussard grapes, goes thru a 5 day cold soaking and a 12 day maceration to extract as much color possible, although it still remains a light amber rose color. The stylistic funk of earth, game, leather gives way to a rich and concentrated mosaic of red fruit flavors, reflecting the unique soil of blue marl and volcanic ash. Satisfying long finish.
Food pairing: Game, Aged cheese, light meals.
