Description: Subtle, but full bouquet; crisp and dry on the palate, with an appealing acidity, distinctive structure, and elegant texture. Delicate effervescence with long-lasting mousse and bead of extremely tiny bubbles. A union of four wines (Chardonnay: 30%, fermented in small oak barrels, and 30% of a different vintage made steel; 30% Pinot Blanc, fermented in steel; 10% Pinot Noir, fermented in steel) is made into a sparkling wine using methode Chamgenoise. Aged minimum of 30 months on the lees, Pas Dosé is disgorged without a dosage, so it’s very dry and expressing the true character of the base wine. Mosnel, meaning “ rock pile,” is a family-owned 40 hectare property producing only estate bottled sparkling wines.
