Grape: 100% Chardonnay.
Notes: Premier Cru.
Very similar to the white wines of Puligny-Montrachet with perhaps an extra note of richness. The winemakers of Chassagne-Montrachet take their profession seriously. The Domaine Jean-Marc Pillot has been very consistent in producing stellar wines with concentrated flavors notable for their abundant fruit and complex soil tones. Jean-Marc Pillot Jr. assumed control of the operation in 1991 from his father and has taken the estate to new heights in regard to quality.
General Description: This bottling is a classic example of the appellation with superb acid revealing it soft citrus flavors and lemon. Somewhat weighty but restrained and linear on the palate. Deep mineral stone throughout the length of the palate with notes of flora.
Suggested Pairing: Fish, Dover Sole, Scallops, raw bar, ceviche, crabmeat, butter or white cream sauces, lobster (steamed), salmon, trout, etc.
