Onabay Vineyards 2009 Sparkling Brut Blanc de Blancs

This wine gets its inspiration from the Blanc de Blanc Champagnes of the Cotes des Blancs region. The wine is made from 100% Chardonnay. When you just open the bottle, it will not give you too much of anything. But wait for an hour or more, it will begin to sing, just like your nice shy friend who needs a little time to speak up. It is made by traditional method, with a second fermentation taking place in the bottle. It benefits from contact with the lees for an extended time. The very modest level of sugar in the Dosage that is added back during disgorgement ensures that the wine remains crisp.
