A super premium sake with a strong sense of terroir. Much admired modern varietal Dewasansan is grown in front of the brewery by the sake master himself, who was also a part of a team who devoted to develop this superior breed from indigenous rice varietals. The rice is polished down to mere 40% to bring out its floral elegance. This high milling rate really should put this sake effectively in the highest quality level of "Daiginjo" but for some beurocratic reasons it remains registered as "Ginjo" level. This, of course, means you get more for less money. Two indigenous yeasts are used in separate tanks, which are then blended into a final large tank for the final fermentation. The whole process is carried out in the coldest time of the winter to achieve a long, slow fermentation without much bacterial problems. The result is rich and complex flavors, yet in a clean and light style. A winner of the honorable Japanese Government Sake Competition for three consecutive years.
